Monday's Menu

Hello everyone! I had a super busy weekend and with us loosing and hour for spring I have been feeling like a zombie today!
 I first wanted to share something my daughter Abby bought me. I was completely surprised by it and love the idea she told me.

She wants me to start writing down some of best recipes so we can start passing down this book from generation to generation! How wonderful! Of course I am going to start with my Grandmother's and Mother's recipes then I'll add the one's I've tried and loved.
So, On to this weeks menu!!

Monday:

  Lunch: Soup
  Dinner: Oven Baked Tacos

Tuesday:
  Breakfast: Just Peachy Smoothie
  Lunch: Oven Baked Meatball Sandwiches
  Dinner: Meat and Potatoes Casserole

Wednesday:
  Breakfast: Oatmeal
  Lunch: Pizza Rolls
  Dinner: Pot Roast Hoagies with Brown Gravy

Thursday:
  Breakfast: Just Peachy Smoothie
  Lunch: Chicken Burritos
  Dinner: Chicken & Broccoli over Rice

Friday:
  Breakfast: Mango Smoothie
  Lunch: Leftovers
  Dinner: Buffalo Chicken Fingers with Fried Okra

Saturday:
  Breakfast: Pancakes
  Lunch: Grilled Cheese Sandwiches
  Dinner: Thai Chicken Noodle Soup

 I've taken out leftover night for Friday night due to the fact that we haven't had any leftovers! YAY!

Putting Flowers In Your Hair

We like to go to Scarborough Renaissance Festival. We started going 3 years ago and forgot how much fun the ren fair's were. I grew up in Houston so I used to go to Texas Renaissance Festival so 3 years ago for my husband's 40th birthday we went to Scarborough (also called Scarby) and we fell in love with it.  For my 40th birthday last year we went to Texas Renaissance Festival and it was fun but not Scarborough.

This is my 40th birthday picture. It's one of my favorites. As you can see I have started dressing up for the fair. This is the beginning of a costume. I needed something for my head, so I sat down this month and made it.
I spent $10.00 on the hair band, flowers and butterflies. I already had my hot glue gun so I got busy working. It took an hour to complete and I think it turned out really well.

Friday Menu round up

Let me begin by saying this. Do you know hard it is to find Sugar cane? Very... I still haven't found any, so my flavored water wasn't made this week. ALSO, Dallas got hit by a major winter storm. I thought to myself I must be nuts to drink a smoothie at 6 am with the temp at 24 degrees, so I opted for Oatmeal!
That storm didn't just mess up the smoothies but my entire menu! It was to cold to do anything! My Son took his sister out for dinner Thursday night so the hubby and I ate leftovers. Friday we were going to have my daughter's birthday dinner but due to it snowing all day and the roads being bad we went out Saturday night.So Friday we ate leftovers.
And I thought I had took pictures but can find them!
However here is 2 of my favorite meals I cooked last week.

Salsa Verde Chicken Casserole Recipe


Ingredients:
1lb of cooked chicken
1 cup Sour Cream
1-1/2 cups salsa verde
Tortilla chips
2 cups shredded Monterey Jack cheese
Optional toppings: avocado slices, thinly sliced green onions or fresh cilantro leaves
Directions
1.       Combine the chicken, sour cream and 3/4 cup salsa in a small bowl. Spread 1/4 cup salsa on the bottom of a greased 8-in.-square baking dish.
2.       Layer with half of the tortilla chips and chicken mixture and half of the cheese. Repeat layers with remaining tortilla chips, chicken mixture and cheese.

3.       Bake, uncovered, at 400° for 20-25 minutes or until bubbly. Serve with remaining salsa and, if desired, optional toppings. Yield: 6 servings.

Chile Colorado Burritos

1.       Ingredients:


2.       1 1/2 to 2 pounds stew meat or other beef cubed (top sirloin is great)
3.       large can mild (red) enchilada sauce* (at least 19 oz.)
4.       2 beef bouillon cubes (or just one--or none--if you want it less salty AND you do NOT add water, just the bouillon)
5.       1/2 can refried beans (optional)
6.       5-7 burrito size flour tortillas
7.       1 cup or so of shredded cheddar cheese
Instructions:
Put beef, whole bouillon cubes (do NOT add water), and enchilada sauce*** into a crock pot and cook on low for 7-8 hours**, or until meat is very tender. (Can also cook on high for maybe 3-4 hours
When beef is done (very tender and flakes off when stirred), taste and add more salt, if desired. Heat up refried beans in the microwave (covered and in a microwave-proof dish, of course)and put your oven on broil. On an oven-proof plate, or cookie sheet even, lay out a tortilla.  Place on tortilla about 1/2 cup of the meat, drained by using a slotted spoon, and a spoonful or two of beans. Roll into a burrito (hopefully you know how to roll these). Pour some of the remaining enchilada sauce from the crock pot over the burrito to cover it. Sprinkle with some cheddar cheese. Broil until cheese is bubbly, about 2-4 minutes.


Serve.
Makes 5-7 burritos, depending on how full you make them.

It's already March!

I would say March Madness, however then I would have to say April Madness, May Madness, e.c.t.
February was a great month! My son, James turned 19 and My baby turned 18! We had a lot of Snow the last week of February. I got a new car (it's new to me). I have been adjusting to all the independence that has been taking place here.

My Daughter, Abby is taking up a Challenge for March. It's a picture a day. She will be posting her challenge every Wednesday here.

As for the Hubby he has taken up a challenge to get my car's windows tinted and to fix the Amp for the radio. (he's going to fix it all by himself, I'm so proud of him!)

For me, I have a few things I want to get done. I'm starting something called "Share 15". It's about cleaning my house. I have to get the whole family involved. (I'm dusting off the whip LOL) Plus I am going to re-visit my house whole budget. I will keep you posted on those Challenges. (And they aren't the easiest of Challenges!)

March's Book to read

YAY! I'm getting to post this early! March's book that I will be reading is To Marry an  English Lord.
I got this book because of my love for Downton Abbey. The marriage of Robert and Cora was based on the truth that was happening to the high class of England during the turn of the century. For them to save their lands and homes (due to mismanagement of money) Dukes and Earl's looked to America's wealthy and married heiress's
I can not wait to give you a report for this book! I bought it on Amazon for $5.00
